REFRESHING PINEAPPLE SOBOLO DRINK (HIBISCUS TEA)

Pineapple Sobolo Drink
Ingredients:
3 cups dried hibiscus tea leaves
6-7 c. boiling water
1 1/2c. coconut sugar
2c. pure pineapple juice
2-3tsp ground ginger
Instructions:
1. Bring water to a boil & pour over tea leaves in a large bowl
2. Let brew for 20-30 minutes (longer if you'd like) until you see a deep red color
3. Once brewed, drain hibiscus leaves squeezing out all the liquid from the leaves (you may toss leaves as you won't need them again or keep them for a garnish later)
4. In a separate bowl, pour sugar and 2-3 tbsp. of boiling water (just enough to melt the sugar)
5. Add melted sugar to sobolo drink along with pineapple juice & ginger
6. Whisk together until all ingredients are combined. (You may have a few specs of ginger throughout, that's normal)
7. Let cool uncovered for 1-2 hours
8. Serve over ice & enjoy!
9. Store in sealed containers for 2-3 weeks (if it lasts that long!)
